Chicken Broth

Core recipe  from SARADALZELL on the WW boards



3 x med carrots
2 x med parsnips (or swede)
1 x large onion
1 x large potato
1 x large leek
large bunch celery
celery (include the leaves)
cup of soup mixture (or half a cup) (pearl barley)
handful of dry spilt peas
2 chicken thighs (or 2 chicken stock cubes)
large pot

Chop and dice the carrots, parsnips, onion, potato and celery.
Place in large pot of water and simmer with chicken, soup mixture and spilt peas for an hour

Add chopped leeks, parsley and celery leaves and simmer for further 45 mins.
Remove chicken thighs, remove skin, chop chicken and return to pot.
end of cooking.
