Brecon Light Cakes
Core
4 oz semolina
½ tsp salt
2 tbsp sweetener
1 tsp baking powder
2 eggs
2 tbsp fresh orange juice
2-3 tablespoons skimmed milk
Beat the eggs together with half the orange juice.
Put the semolina, baking powder and the salt into a mixing
bowl and add the sweetener. Add the egg mixture, stirring well.
Beat in milk to produce a fairly thin batter. Spray a heavy frying pan with Frylight.
When hot, drop in tablespoons of the mixture, allowing room
to spread ( 2 - 3 inches).
Cook on each side until golden brown. Drain on kitchen paper.
