Couscous Fruit Cake

Couscous Fruit Cake

Serves 8

Points per serving: 2 (original points)
Core points per serving: ½

200g dry weight couscous
100g sweet mincemeat
2 medium eggs
8 tbsp low cal sweetener
mixed spice

Put couscous into a bowl and cover with warm water and leave to absorb.  Mix in remaining ingredients.
Pour into an ovenproof dish or tray and pat down.  Bake in the oven Gas 4 180ºC until golden brown.


Allow to cool and slice

Notes:
May be considered a tweak
