Tomato & Rice Soup

large onion, chopped

garlic cloves, crushed
2
x 400g tins chopped tomatoes
1
tbsp clear honey (optional)
1.2
litres (2 pints) stock
small
bunch of parsley, thyme, rosemary or basil
100g
basmati rice
salt
and pepper
Heat
a large pan and spray with low fat cooking spray. Fry the onion and
garlic for 5 minutes until softened, adding a little water if necessary to stop
sticking. Add the tomatoes, seasoning and honey. Bring to the boil and simmer
for 10 minutes.
Add
the stock, herbs and rice. Simmer for a further 25 minutes, then serve.
