Spinach Soup

Spinach Soup

4 pts the lot
Core recipe

2 tsp olive oil
2 cloves garlic crushed
1 small onion, finely chopped
1 stalk celery, finely chopped
1 medium white potato, peeled and cubed (200g)
400ml chicken or veg stock
400ml skimmed milk
200g bag baby spinach

Freshly ground black pepper and salt to taste

Heat oil in large saucepan .. Sauté garlic, onion, celery and potato for 5 minutes.
Add stock and milk. Bring to a boil, cover and simmer for 10 minutes.


Stir in half the spinach, cover and simmer for 10 more minutes.
Season to taste.
