Sausages Boulangere

4 low fat sausages

300g potato, peeled and very thinly sliced
1 onion, thinly sliced
veg/chicken stock
75ml skimmed milk

Preheat oven to gas 6/200C.
Brown the sausages and onions in frying pan, in spray oil. Meanwhile, put the
thinly sliced potatoes in a wide dish with about 100ml stock, plus some
seasoning. Cover and microwave for about 4 mins or so on full, until quite
tender.
Mix the onions into the potatoes and transfer to ovenproof dish. Add
the milk and enough stock to cover the potatoes. Place sausages on top, and
bake in oven for about 20-30 mins until potatoes are completely tender and
slightly browned.
A really comforting homey dish. Amounts for liquid are a bit
vague, but rather depends on your dish! I weigh the potatoes after peeling and
slicing by the way (I use a mandoline to slice them really thinly).
Serve with cabbage or green beans.
