Sausage & Cannelini Bean Casserole

Serves 4

No Count 2 pts per serving

frylight
1 x pack 8 Bowyers low fat sausages (1pt each)
2 red peppers, sliced
1 onion, sliced
1 garlic clove, chopped
1 x 400g can chopped tomatoes
1 tbsp sun-dried tomato paste (1pt) or use tomato puree
2 tsp smoked paprika
200ml stock
1 x 400g tin cannelini beans, drained & rinsed
fresh parsley, chopped

In a large casserole sprayed with frylight, cook the sausages until golden, about 10 mins.  Remove and set aside.

Add the peppers, onion and garlic and cook for 5 mins.  Return the sausages and add the tomatoes, tomato paste, smoked paprika and stock.  leave to simmer for about 20 mins, then stir in the beans and cook for a further 5 mins.


Stir through the parsley and serve.
