Salmon & Noodle Soup

Salmon & Noodle Soup

Serves 4

Full Choice 6½ pts per serving (original points)

No Count  3 pts per serving

2cm sliced fresh ginger
2 sliced garlic cloves
frylight
400g can Blue Dragon reduced fat coconut milk
150 ml chicken stock
2 tsp fish sauce
100g egg noodles
75g mangetout
300g fresh salmon fillets, skinned

Cook the ginger and garlic in the frylight for 2-3 mins.  Add the coconut milk, chicken stock and fish sauce.  Simmer for 10 mins.  Add the egg noodles, mangetout and salmon fillets.


Cook for 5-6 mins. Remove salmon, serve the noodle broth and top with the salmon.  Garnish with chopped or shredded spring onions and lime juice.
