Roasted Red Onion and Butternut Squash Soup
Serves 4-6

2 red onions, thickly sliced
8 sage leaves
1 large butternut squash, peeled & chopped
2 litres veg stock
2 garlic cloves
1 tsp paprika
Put the red onions, squash and garlic in a roasting
tin and spray with spray oil.
Roast in the oven at Gas 5-6/180º-200ºC for about
30 mins until the veg are tender.
Put the veg into a large pan,swish some veg stock
around the roasting tin to get up any bits left in the tin and add to the pan
with the remains of the stock, paprika, and sage leaves. Bring to the
boil and simmer for 30 mins.
Blend the soup and serve.
