Ratatouille Soup

The sugar in this will cost you ½ pt and the sun
dried tomatoes ½pt. This is for the whole recipe.
Serves 6
1 onion, chopped
1 clove garlic crushed
100g aubergine, diced
125g courgette, diced
60g green pepper, diced
60g red pepper, diced
110g fresh plum tomatoes, roughly chopped
3 tbsp tomato puree
1 tsp brown sugar (½pt)
pinch cayenne pepper
900ml veg stock
20g sun dried tomatoes (not in oil), diced &
soaked in water
salt & pepper
Spray a large pan with frylight and gently cook the
onion for 10 mins, without colouring. Add the garluc, 40g aubergine, 75g
courgette, 25g of each pepper, tomatoes, tomato puree, sugar, cayenne and
stock. Cover & simmer for 10mins, then puree or blend the soup.
Meanwhile, fill a pan with salted water and bring
to the boil. Add the remaining veg and sun dried tomates and simmer for 1
min. Drain and add to the soup. Season to taste & serve.
