Quick Sausage Casserole

Quick Sausage Casserole 

Serves 1
2 (or 4 pts if adding beans) per serving

2 of the M&S COU tomato and chilli sausages per person or veggie ones -2pts
1 tin of chopped tomatoes
2 onions
10 mushrooms
1 red pepper
hot pepper spice
1 tbs Worcestershire sauce
garlic
6-8oz veg stock (just to make it a bit more gravy like)
optional small tin of kidney beans or baked beans 2pts

Arrange the sausages on a grill pan and grill for 10-15 minutes, turning frequently, until the sausages are cooked through.
Meanwhile, put the spray oil in a saucepan, add the onions, mushrooms and red pepper and cook until they are softened. Add the garlic and, then add the tinned tomatoes, stock and the drained beans if using. 

Season with red pepper and Worcestershire sauce (or preferred spice) and bring to a simmer. When the sausages are ready, dice them up and add to the sauce and simmer for 5 minutes.. Serve with a green vegetable or salad

If I do it without beans then I usually have some mash potatoes with it as a splurge
