Pumpkin & Sweet Potato Soup
Serves 4

Core recipe
1 onion chopped
1 clove garlic, chopped
675g pumpkin flesh (or butternut squash)
450g sweet potatoes, peeled & cubed
1 tsp fresh ginger, grated
2 tsp ground coriander
1.5 litres veg stock
1 tbsp olive oil
pepper
Put onion, garlic, pumpkin, sweet potato, ginger and
coriander into a large pan. Add stock, bring to the boil and simmer 25-30
mins until vegetables are tender.
Add olive oil, season and blend the soup. Serve.
