Prawn Noodle Soup

Prawn Noodle Soup

Serves 4

Full Choice 1 pt per serving

2 long shallots (or ½ small onion) finely sliced
1 tsp coriander seed
2 smoked garlic cloves, crushed (or unsmoked)
2 tsp finely chopped lemon grass
small piece fresh ginger, peeled and finely sliced
1 small red chilli, finely sliced
600ml veg stock
½ tsp ground turmeric
50g fine egg noodles (dry weight)
100g peeled cooked prawns, cut in half
50g beansprouts

In a large pan, dry fry the shallot or onion until soft.

Crush the coriander seed on a chopping board with the broad side of a chopping knife and add to the pan with the garlic.  Cook for 2-3 mins then add the lemon grass, ginger, chilli, turmeric and stir well to combine.

Add the stock and bring to the boil.  Reduce heat to a simmer and add the noodles.  Cooik 5-6 mins until the noodles are soft then add the prawns and cook 1-2 mins.


Remove from the heat and stir in the beansprouts.   Serve.
