Pear and Parsnip Soup

Pear and Parsnip Soup

 Serves 4

4 ripe pears, cored, peeled and chopped
3 large parsnips, peeled and roughly chopped
1 leek, washed and finely chopped
750ml vegetable stock

Place pears, parsnips, leek and vegetable stock in large pot.
Cook over low heat for approximately ½ hour, or until all vegetables are soft.
Blend soup using stick blender or in food processor until smooth.
