Mango Tea Cake

Mango Tea Cake

Serves 12

Points per serving: 1½ (original points)

125g Flora light, melted (polyunsaturated margarine)
15g granulated sweetener,
1 medium egg
1 tsp vanilla essence
1 mango, peeled and diced very small,
120g plain flour,
1 tsp baking powder
3 tbs fruit juice

Pre-heat the oven to 180*C

Stir sweetener into butter, add egg and vanilla essence and mix in the mango.

Mix flour with the baking powder and add ¼ at a time to the mango mix.

Stir in enough juice to make a wet mixture.

Pour into greased and lined round cake tin, and bake for 30-40 minutes.

Cool in the tin before turning out
