Low Fat Corn Bread

Low Fat Corn Bread

Serves 12

Points per serving: 1½  (original points)
Core points per serving: ½

125 g plain flour
140 g cornmeal (Polenta)
25 g sugar
2 tsp baking powder
½ tsp salt
2 egg whites
235 ml skim milk
60 ml unsweetened applesauce

In a bowl, combine the flour, cornmeal, sugar, baking powder and salt.

In another bowl, combine egg whites, milk and applesauce. Stir into dry ingredients just until moistened.

Pour into a 9-in. square baking pan coated with nonstick cooking spray. Bake at 400º F /200ºC for 15-20 minutes or until a toothpick inserted near the center comes out clean. Serve warm
