Leek And Onion
Soup
Serves 4
Points per serving: 0
Spray oil
3 medium leeks
1 large onion
2 chicken or vegetable stock cubes (made up as per
instructions)
Salt and pepper to taste
Heat pan and add spray oil, chop and fry onions to soften.
Chop leeks and wash thoroughly. Add leeks to onions and
allow to sweat for a few minutes.
Make up stock as per packet instructions and add to pan,
bring slowly to the boil and allow to simmer until onions and leeks are soft ,
10-15 minutes.
Season to taste and mush up in a blender if you like smooth
soup or leave chunky if you prefer a bit of bite!
Freezes well.
