Hearty Pepper Soup
Serves 4
1 pt per serving
Core recipe
½ each green, red and yellow peppers
½ tsp dried mixed herbs
1 tsp dark soy sauce
250 ml vegetable stock
150g pot low fat natural yoghurt
2 celery sticks chopped
4 medium potatoes, cooked and diced
250 ml tomato juice
salt and pepper to taste
Place all ingredients in food processor and blend until smooth. Pour mixture into a saucepan and slowly bring to the boil, then reduce heat and simmer for 5 minutes.
