Stout, Apple & Sausage Casserole

1
x 400g pack Bowyers 95% fat free pork sausages
low
fat cooking spray
2
medium onions, chopped
1
large leek, sliced
2
medium eating apples, cored, peeled and chopped
300ml
Irish Stout eg Murphy's
1
veg stock cube dissolved in 150ml water
1
tsp dried mixed herbs
4
tsp instant gravy granules
salt
& pepper
Heat
a large non-stick frying pan and add the sausages with a couple of sprays of
frylight. Cook gently, turning often until browned. Add the onions, leek
and apples to the pan and cook 3-5 mins, stirring occasionally.
Pour
in the stout and stock. Add the herbs. Simmer for 20-25 mins then stir in
the gravy granules to thicken. Season to taste and serve with mashed
potatoes and cooked cabbage, remembering to add the points for the mashed
potato.
