Cock A Leekie Soup
Serves 4
3 pts per serving (Original points)
1½ pts on core
4 skinless chicken breasts
1 bay leaf
450g leeks, washed & sliced
500ml stock
25g long grain rice
100g ready to eat prunes, thinly sliced
Place chicken, bay leaf, leeks and srock into a pan and
simmer for 1 hour, topping up with water if necessary. Remove chicken and
bay leaf and any froth from the surface.
Add rice and prunes and simmer 30 mins. Dice the
chicken and return to the pan just before serving.
