Chinese Chicken Soup

Chinese Chicken Soup

Serves 4

Full Choice 3pts per serving

No Count: use spray oil and it will be free

2 cooked chicken breasts
1 tsp olive oil (or use spray oil)
6 spring onions, chopped
1 onion, chopped
1 red chilli, chopped
2 garlic cloves, crushed
1 litre chicken stock
125g egg noodles (dry weight)
1 carrot, chopped
2 tbsp soy sauce

Heat oil, fry carrots, spring onion, onion, chilli and garlic for 1 min.

Add stock and soy sauce and bring to the boil, simmer until veg are tender.

Add noodles and simmer 3-4 mins until noodles are tender.

Add cooked chicken and simmer to heat through thoroughly.

Adjust seasoning, and serve.


Note: You could add more veg as it suits you, eg beansprouts, water chestnuts, bamboo shoots, mange tout.
