Brownies

Brownies

Makes 8

150g low fat soft cheese
180g muscovado or soft brown sugar
45g cocoa powder
2 egg whites
1 teaspoon vanilla essence
1 tablespoon semi-skimmed milk
60g plain flour
½ teaspoon baking powder
2 tablespoons low-fat soft cheese (optional - frosting)
1 rounded teaspoon low-fat fromage frais (optional - frosting)
½ tablespoon drinking chocolate powder (optional - frosting)

  1. Preheat the oven to Gas Mark 4/180ºC/350ºF
  2. Line a 15cm (6”) square tin with baking parchment
  3. In a large bowl combine the cheese with the sugar
  4. Add the cocoa powder, egg whites, vanilla essence and milk
  5. Beat well until smooth
  6. Sift the flour and baking powder into the cheese mixture and fold in lightly
  7. Pour the mixture into the tin and bake in the oven for 30-40 minutes until just set
  8. Remove from the oven and allow to cool in the tin
  9. Whilst the brownies are cooling make the low fat frosting if desired by combining the 2 tablespoons cheese, fromage frais and drinking chocolate powder in a bowl
  10. Cut the brownies into 8 pieces and top with the low fat frosting if desired
  11. Serve!
