Brownies

Makes 8
150g low fat soft cheese
180g muscovado or soft brown sugar
45g cocoa powder
2 egg whites
1 teaspoon vanilla essence
1 tablespoon semi-skimmed milk
60g plain flour
½ teaspoon baking powder
2 tablespoons low-fat soft cheese (optional - frosting)
1 rounded teaspoon low-fat fromage frais (optional - frosting)
½ tablespoon drinking chocolate powder (optional - frosting)
- Preheat the oven to Gas Mark 4/180ºC/350ºF
- Line a 15cm (6”) square tin with baking parchment
- In a large bowl combine the cheese with the sugar
- Add the cocoa powder, egg whites, vanilla essence and milk
- Beat well until smooth
- Sift the flour and baking powder into the cheese mixture and fold in lightly
- Pour the mixture into the tin and bake in the oven for 30-40 minutes until just set
- Remove from the oven and allow to cool in the tin
- Whilst the brownies are cooling make the low fat frosting if desired by combining the 2 tablespoons cheese, fromage frais and drinking chocolate powder in a bowl
- Cut the brownies into 8 pieces and top with the low fat frosting if desired
- Serve!
