Baked Mini
Doughnuts
Makes 16
Points per serving ( 2 doughnuts): 1½
75g plain flour
1 tsp baking powder
1 egg beaten
1 tsp corn oil
½ tsp vanilla extract
75g caster sugar
4 tbsp skimmed milk
½ tsp salt
low fat cooking spray

To serve:
2 tsp caster sugar
½ tsp cinnamon
½ tsp cinnamon
Preheat the oven to 160ºC/300ºF/Gas 3.
Combine all the ingrediants in a bowl to make smooth batter.
Spray the baking sheet with the low fat spray. Almost fill each hole with the
mixture,making sure you don't overfill( or, when cooked, the doughnuts will
have no holes).
Cook for 10 - 15 minutes, until risen & firm to the
touch. On a small plate, mix together the castor sugar and cinamon. Remove the
cooked doughnuts from the tin. Dip the bottom of each in the sugar &
cinnamon mix & leave to cool on a rack.
Tip: You can use a mini muffin tray and this worked
fine.
