2 inches fresh ginger
7 cloves garlic
4 tbls water
Step 2:
olive oil spray
10 cardamon pods
2 bay leaves
1 inch cinnamon stick
Mixed vegetables
Step 3:
200g finely chopped onions (or mashed
/ pulped)
2 tsp cumin
2 tsp coriander
1 tsp cayenne
1-1/2 tsp paprika
2 tsp Tomato puree
Step 4:
1 1/4 tsp salt
1/2 pint water (minus the 4tbls from step 1)

Puree ginger
and garlic. Spray pan with oil spray. Add cardamom pods, bay leaves, cinnamon stick and vegetables to the pan and gently brown.
(only enough meat to cover the pan). and brown on all sides). remove and set aside.
Spray the pan again and add the onions, once they turn brown at the edges add the cumin, coriander, cayenne, paprika and tomato puree and stir for a few seconds.
Add the reserved vegetables with the salt and water. Stir well and bring to the boil. Cover and simmer on a low heat until the vegetables are tender to your liking.
