Apple and Sultana Muffins

75g polyunsaturated margarine
100g caster sugar
1 medium egg, beaten
2 tsp vanilla essence
180g jar apple sauce
1 large dessert apple peeled and diced
50g sultanas
200g SR white flour
1 tsp baking powder
1 tsp ground cinnamon
Preheat oven to gas mark 5/ 190ºC, fan oven 170ºC. Place 24 cases in 2 muffin trays.

1 large dessert apple peeled and diced
50g sultanas
200g SR white flour
1 tsp baking powder
1 tsp ground cinnamon
Preheat oven to gas mark 5/ 190ºC, fan oven 170ºC. Place 24 cases in 2 muffin trays.
Cream margarine and sugar in a large mixing bowl then add the egg and vanilla
essence, mix well. Finally add apple sauce, apple and sultanas and stir
together.
Sift flour, baking powder and cinnamon into another bowl.
Add dry ingredients to the wet ones it's important to do this quickly if the
muffins are to rise. Using a dessert spoon dollop the mixture into each of the
cake cases and then immediately place the muffins in the oven.
Bake for 12-15 minutes until the muffins are risen, firm to the touch and
golden-brown. Turn the muffins out of the tin but leave in the cake cases until
cool.
The muffins will keep in an air tight container for up to 3 days
