Oatmeal Cookies
Serves 16
75 g plain flour
200 g oats
½ tsp baking powder
1 tsp cinnamon
¼ tsp ground cloves
½ tsp ground ginger
115 g butter, softened
150 g light brown sugar
50 g caster sugar
1 egg white
Preheat the oven to Gas mark 4/180°C/350°F.
Mix together the flour, oat cereal, baking powder, salt,
cinnamon, cloves and ginger, set aside.
In a large mixing bowl, cream together the butter and sugars
until pale and fluffy, add the egg white and beat well. Add the dry ingredients
and mix thoroughly until well combined.
Divide the mixture into 32 balls and place well apart onto 2
to 3 non-stick baking trays, press each cookie down lightly with the back of a
spoon then bake for 12 to 15 minutes.
Remove to a wire rack to cool and crisp up. Yields 2 cookies
per serving
