Pear and Muesli Muffins
Makes 16
Points per muffin 1½
105g SR flour
70g wholemeal SR flour
50g unsweetened muesli
1-2 tbsp Candarel Spoonful
2 tbsp sunflower seeds
1 tsp ground cinnamon
100ml buttermilk
2 eggs
2 tbsp olive oil
2 tbsp pear juice
129g pears in juice diced
In a large bowl, combine dry ingredients. In a
separate bowl beat buttermilk, eggs, oil and juice until smooth and
creamy. Pour into flour mixture with pears and stir lightly to just
combine. Don't overmix.
Spoon into lined muffin tins and bake at Gas 4/180ºC/350ºF
for 15-20 mins or until golden brown.
