Almond Slices
150g Extra light philli soft cheese
4 tblsp sweetener
3 medium eggs – separated
2 very soft banana – peeled and mashed
200g semolina
½ tsp baking powder
4 teaspoons almond essence
4 heaped twaspoons cocoa
1 sheet Jus Roll filo pastry
1½ tabs flaked almonds ( optional)
NC jam, made with a few strawberries etc & sweetener
1. Preheat the over to Gas Mark 4/180 degress c / fan oven 160 degrees c
2. Line a swiss roll tin with 1 sheet filo pastry.
3. Cream together the low fat soft cheese and the sweetener and then whisk in the egg yolks and mashed banana .
4. Fold in the semolina and baking powder. Whisk the egg whites in a separate bowl until stiff. Fold them into the mixture with the almond essence.
5. Spread NC jam over pastry, then add filling, smotthing down.
6. Sprinkle flaked almonds on top.
7. Bake for 15 - 20 minutes until firm to touch.
8. Cut into 16 slices.
This recipe makes 16 good sized almond slices , 3 points for the full recipe ( or 1½ point for the full recipe if you do not use the flaked almonds)
