Cranberry Muffins

Cranberry Muffins

From a recipe card given out in WW class.

Makes 12 at 3 pts each (original points)

300g plain flour
2 tsp baking powder
tsp ground cinnamon
125g light muscovado sugar
75g dried cranberries
1 egg, beaten
225ml skimmed milk
50ml sunflower oil

Put paper cases into a muffin tin.  Heat oven to 200ºC/375ºF/Gas 6.  Sift the flour, baking powder and cinnamon into a mixing bowl. Add the sugar and cranberries and mix.  In another bowl, beat the egg, milk and oil together, then add to the dry ingredients, mixing well.  Spoon into paper cases and bake for 15-20 mins until well risen and firm.
