Baked Do-nuts

100g (3 1/2 oz) plain flour
1 tsp baking powder
1 egg, beaten
1 tsp corn oil
1/2 tsp vanilla extract
75g (2 3/4oz) caster sugar
4 tbsp skimmed milk
1/2 tsp salt
low-fat cooking spray

TO SERVE
4 tsp caster sugar
1/2 tsp ground cinnamon
Pre-heat the oven to gas mark 3/170*C/325*F
Combine all the ingredients to form a smooth batter.
Spray the baking sheet with low-fat cooking spray. Almost fill each do-nut hole, making sure you do not overfill (or when cooked the do-nuts wil have no holes!)
Cook for 8 - 10 mins, till risen and firm to the touch.
On a small plate, mix together the sugar and cinnamon for serving.
Remove the cooked do-nuts from the tin. Dip the bottom of each in the sugar and cinnamon mix and leave to cool on a rack.
