100g currants (4pts)
100g sultanas (4pts)
150ml hot black tea
2 level tbsp runny honey (1pt)
1 medium egg (1½pts)
3 tbsp orange marmalade (5pts)
225g wheatmeal self raising flour (11pts)
Place sultanas and currants in a basin and pour over the
tea. Stir in the honey and cover. leave for at least 6 hours or
overnight.
Preheat oven to Gas 4/180ºC/350ºF. Line a 2lb (1kg)
loaf tin with non-stick baking parchment.
beat tje egg, stir into the tea mixture with the
marmalade. Stir in the flour and turn into the tin.
Bake for 1 hour until a skewer inserted in the centre comes
out clean.
Cool and cut into 12 slices.
