Sponge Cake for 2

38g caster sugar
1 large egg
38g self raising flour



Pre-heat oven to gas mark 4/180ºC


Put the sugar and egg into a small bowl. Whisk until it turns a creamy colour and is fluffy and you leave a trail when you lift the whisk out.

Gently and gradually fold in the flour taking care not to pop the bubbles you have made as these will make it rise.

Spray 2 ramekins with frylight and divide the mixture between them.

Bake in the oven for approx 30 mins until risen and golden.




Notes:

Makes 2 generous cakes. They should rise just above the edge of the ramekin when cooked. If they don't then try whisking the sugar and egg mixture for longer next time.

I serve with custard and a tablespoon of maple syrup per cake for a real treat.
