Almond Thins.

Almond Thins.  

(Almost No Count)  

1½ pts for the whole recipe

Ingredients.

2 medium eggs separated.
1/2 tsp baking powder.
pinch salt
2 Tbsp sweetner.
2 tsp almond extract.
3 Tbsp s/r flour.

Preheat oven to 190c. 375f

line baking sheet with parchment
In large bowl with electric mixer on medium speed beat egg whites until foamy. Slowly add baking powder.salt and sweetener and continue beating on medium speed until stiff peaks form.

In another large bowl combine egg yolks and almond extract and beat with a fork until thoroughly mixed.
Fold into beaten egg whites just until combined. Sift flour over egg mixture and fold in until batter is smooth and light.
drop 1 dessertspoon of batter per cookie about 2" apart on parchment lined baking sheet.

Bake for 12 - 15 minutes or until golden.

Cool on baking sheet for 5 mins. then remove to rack to cool completely. Cookie will be crisp on cooling

Makes 18 - 24 cookies depending how generous you are.
