Oatmeal muffins

Oatmeal muffins

Free on no count as part of a meal

1 cup fat-free skim milk
1/2 cup Egg Beaters (or 2 eggs)
1/2 cup unsweetened applesauce (or an apple in the food processor for chunks of apple)
2 tsp vanilla extract

2 1/2 cup uncooked oatmeal  (250g)
1 1/2 tsp baking powder
1/2 tsp salt
1/4 or 1/3 cup Splenda (1 cup Splenda is 25g)
1 – 1.5 Tbs ground cinnamon

Combine wet ingredients and add dry ingredients. Bake at 350 for 40-45 min. keeps well in refrigerator or freezer. It's good cold or warm.
You can use any kind of dish: cake pan, glass pan, cast iron skillet, stoneware, muffin pan, 8" square pan, etc

Variations: You can add any of these. You just have to play around with ingredients & amounts to find your favorite

Add ¼ cup of peanut butter  Count points 

Add raisins & walnuts Count points 25g raisins = 1pt  9g walnuts = 1pt

Add 4 pkts. Of Nestles ff hot chocolate mix added to it and eliminate the cinnamon  Or Options or Cocoa powder (25g = 2pts)

Substitute canned pumpkin for the applesauce & use pumpkin pie spice instead of cinnamon.

Add Two mashed bananas instead of applesauce

Add 2 mashed bananas, small canned crushed pineapple (drained) and 2 carrots grated instead of applesauce (bake this one in 11 x 7 pan for 55 min)


Add blueberries
