Cheesecake Pudding

Cheesecake Pudding

Serves 1

4 oz canned pineapple (in juice)
1 egg
1 tsp lemon juice
vanilla essence
2 oz extra light soft cheese eg Philli extra light


Combine pineapple, egg, lemon juice, vanilla and cheese in blender container.  Blend until smooth. Pour into a 1pt casserole dish and bake for 40 min  Gas 4 350ºF 180ºC
