Spiced Apple Cake

Spiced Apple Cake

Makes 16 slices
Points per cake 56  (Original points)
Points per slice 3½
Freezing recommended

350g SR flour
1 tsp baking powder
2 tsp ground mixed spice
85g low-fat spread
50g butter
300g cooking apples chopped
225g sultanas
115g light brown sugar
150ml skimmed milk
1 egg, beaten
1 tbsp demerara sugar

Preheat oven to Gas 4/170 ºC/320ºF.  Line a 20cm (8") round cake tin with baking parchment.
Sieve the flour, baking powder and spice into a bowl.  Rub in the low fat spread and butter until the mixture resembles fine breadcrumbs.
Fold in the apples, sultanas and brown sugar.  Mix the milk and egg and stir into dry mixture to form a soft dropping consistency.
Pour into prepared tin and sprinkle the surface with the demerara sugar.  Bake for 1¼ to 1½hours until well risen and firm to the touch.
Leave to cool for a while in the tin and then transfer to a wire rack.

Improves if kept wrapped in foil for one day before eating.
