Sweet Potato and Lentil Soup

Sweet Potato and Lentil Soup

Servings | 4

Spray oil
1 tsp garlic, minced
1 tsp salt
2 leeks, cleaned and sliced
2 tsp ground cumin seeds
800g canned brown lentils, drained and rinsed
1 medium sweet potato, cut into 1cm cubes
6 cups hot water
vegetable stock cubes
ground black pepper

Spray pan with oil and cook garlic and leeks gently. Cook for 5 mins and add 1tsp salt. Cook for another 5 to 10 mins.

Stir in cumin and cook for another 1 min.

Add lentils, sweet potato, water, stock cubes and black pepper and bring to boil.

Cook for 20 mins, until lentils are soft.
