Spiced Parsnip & Sweet Potato Soup

4 shallots softened in a vegetable oxo cube dissolved in a small amount of water, peel and chop 3 parsnips and 2 sweet potatoes, add to the pan and cover with water, add a couple of tsps of mixed spice and salt and pepper. Bring to the boil and simmer until vegetables are soft, blitz in food processor or liquidiser if too thick add skimmed milk.
