Provencale Tuna Soup

Provencale Tuna Soup

5 sprays low fat cooking spray
1 large onion, finely chopped
1 carrot, finely chopped
1 stick celery, finely chopped
1 clove garlic, crushed
1 courgette, sliced thinly
1 x 400g tin chopped tomatoes
2 tbsp tomato puree
850 ml stock
2 tsp mixed herbs
425g tuna in brine, drained
400g cooked butter beans or cannellini beans
1 tsp tabasco sauce or to taste
salt & pepper

Heat the spray in a large pan and gently cook the onion, carrot, celery and garlic for 5 mins until softened but not browned.

Add courgette, tomatoes, puree, stock and herbs.  Bring to the boil, reduce heat and simmer for 15 mins.

Add tuna and beans.  Season with salt, pepper and tabasco.  Simmer for 10 mins and serve.

Tip:  Make with less liquid and serve with couscous as a casserole.
