4 fresh cod fillets
2 large basil leaves
8 slices of parma ham
225 g couscous
300 ml (1/2 pint) veg stock
Pinch of saffron
1 red pepper, finely diced
1 tbsp chopped fresh chives
Salt and freshly ground black pepper
Preheat oven to 200C, 400F, Gas Mark 6
Place cod fillets in an ovenproof dish, season on both sides with salt & pepper. Place 2 basil leaves across the top of each fillet. Wrap each fillet with
Bake in oven for 15-20 mins
Meanwhile place the couscous in a large bowl. Add saffron & red pepper
Make up stock with boiling water and pour over the couscous
Cover and allow to stand for several minutes
Remove cover and fluff couscous grains with a fork
Arrange couscous on plates, place cod fillets on tops and sprinkle with fresh chives
Serve with a large mixed salad
