Oriental Noodle Soup
Serves 4
Full Choice 3½ pts per serving
No Count ½ pt the whole recipe
400ml veg stock
1 tsp curry paste (½pt)
250g extra lean minced beef
100g rice noodles (dry weight) soaked according to
apck instructions
110g beansprouts
1 red chilli, deseeded and finely chopped
zest of 1 lime
2 tbsp chopped fresh coriander
Heat alarge pan and brown the mince with the curry
paste for 2-3 mins. add stock and bring to the boil, simmering for about
15 mins. then sitr in the soaked rice noodles, beansprouts and
chilli. Cook for 1 more minute then serve, sprinkled with coriander and
lime zest.
NOTE
Make this completely no count by using curry powder
instead of curry paste.
