Hot Lentil & Tomato Soup

Hot Lentil & Tomato Soup

Serves 4

Points plan: 10 points for the lot,  2.½ pts per serving (original points)

Core: Use skimmed milk to make it completely core.

1 tin chopped tomatoes
half tube of tom puree
4-5 cloves garlic crushed
Splash Worcestershire sauce
half teaspoon chilli flakes
150g Split Red Lentils (7 points)
Half pint semi skimmed milk (2 points)
1 pint water
2 chicken (or veg) stock cubes
50g wafer thin smoked ham (1 point) chopped (optional)
1 large onion diced
salt and freshly milled black pepper to taste

Put all ingredients into a large sauce pan and bring to the boil.  Simmer for 45 mins until lentils and onion are soft.  Blend/puree until smooth.

This soup tastes better if left overnight in the fridge.
