1 Butternut Squash or Pumpkin
2 Onions
3 cloves Garlic
400g Tin Butterbeans
100g Potato
Salt & Pepper
1pt chicken stock

1pt chicken stock
Chop onion finely and fry in spray oil. Add chopped
potato, Butternut Squash(or Pumpkin) garlic, Salt and Pepper. Stir then add
chicken stock. After veg are soft, add the butter beans and simmer for 10 mins.
Blend until smooth and serve!
You can sprinkle with chopped chives and a spot of reduced fat creme fraiche if you want! (count extra points for these though!)
