Green Pea Soup with Smoky Bacon

Core recipe

100g onion, chopped
100g lean smoked back bacon, in one piece preferably
600ml ham stock from a cube
450g frozen peas
225g potatoes, peeled & coarsely chopped
300ml skimmed milk
salt & pepper

Simmer chopped onion and bacon in the ham stock for about 20 mins.  Remove bacon and set aside.  Add the peas and simmer for 5 mins.  Blend the soup until smooth.  Chop the bacon and add to the soup with the potatoes.

Bring to the boil and simmer for 10 mins until the potatoes are soft.  Season to taste and serve.
