Fruited Tea Loaf

100g All Bran
125g caster sugar
1 tsp ground mixed spice
225g mixed dried
fruit
300ml skimmed milk
125G courgettes, grated
100g Self raising
white flour
Preheat oven to Gas Mark 4/180°c/fan oven 160°c. Line
a 700g (1Ib 9oz) loaf tin with baking parchment.
Place the All Bran, sugar, mixed spice and dried fruit into
a mixing bowl and stir thoroughly. Stir in the milk and leave the mixture
to stand for 30mins.
Stir in the courgettes and sift the flour. Mix well
and then spoon the mixture into the loaf tin, level the surface with the back
of a spoon. Bake for 1 hour or until a skewer inserted into the centre
comes out clean.
Transfer the load to a cooling rack and allow to cool before
cutting
As there is no fat in this tea bread it will only last for
up to 3 days so wrap it well and and store in a cool place.
