Easy Sweet & Sour Corn Soup
The base of this soup can be made using frozen diced
vegetables if you wish, and then all you have to do is add the flavourings. Real
fast food!
Serves 4
Points plan 1 pt per serving (original points)
Core 1 pt the whole recipe
225g frozen
sweetcorn
2 celery sticks,
finely sliced
2 fresh red
chillies, seeded and finely chopped
1 red pepper,
seeded and finely chopped
6 spring onions,
finely sliced
1.2 litres vegetable stock
2 tablespoons light
soy sauce
1 tablespoon clear
honey
1 tablespoon rice
wine vinegar
salt and freshly
ground black pepper
2-3 tablespoons
chopped fresh coriander to garnish
Place all the ingredients except the coriander in a large
saucepan and simmer for 15-20 minutes until the vegetables have softened.
Add salt and black pepper to taste, although you may find
the soy and chillies add sufficient flavour.
Just before serving, garnish with the chopped fresh
coriander.
Serve the soup as it is or you can add a few cooked noodles
in the base of each bowl.
