Chunky Minestrone and Baked Bean Soup

2. medium carrots chopped
1 cup cabbage chopped
1 leek chopped
1 small onion chopped
1 garlic clove finely chopped
1 tin chopped tomatoes
1 tin baked beans
3 oxo beef cubes
2/3 cup fusili or small pasta
1/4 tsp pepper
3 cups of water, add more if needed. depends how thick you like it
spray oil.

In large saucepan saute carrots,cabbage,leek,onion and garlic for about 5 mins in frylite
Add water, oxo cubes and tin tomatoes
bring to boil,reduce heat and simmer uncovered for about 25-30 mins until veg are tender. Add pasta to soup for last 15mins add pepper.
When soup cooked add tin baked beans.

A lovely chunky,filling,no count soup for lunch.
