Christmas Cookies
Decorate these classic treats using tubes of coloured icing,
or let the kids have some fun and do it themselves!
Makes 24
225 g caster sugar
125 g polyunsaturated margarine
1 large eggs, lightly beaten
2 level tbsp golden syrup
2 tbsp lemon juice
2 tsp vanilla essence
300 g plain flour
1 tsp baking powder
½ tsp bicarbonate of soda
½ tsp mixed spice
50 g icing sugar, mix to a stiff paste with 1-2tsp hot water
and 1-2 drops of orange food colouring
Use an electric whisk to beat together the sugar and
margarine until smooth. Add the egg, golden syrup, lemon juice and vanilla;
beat until smooth and pale in colour.
In a separate bowl sift together the flour, baking powder,
bicarbonate of soda and mixed spice. Slowly beat flour mixture into margarine
mixture until a stiff dough forms.
Divide dough into four equal parts and flatten each quarter
to form a round shape. Wrap each in cling film and refrigerate for 30 minutes
or overnight.
Preheat oven to Gas Mark 4 / 180ºC / 170ºC fan / 350ºF.
