Cheesy Bacon
Muffins
Serves 12
Points per serving: 3½ original points
2 tsp oil for greasing
100g lean back bacon
1 small onion, finely chopped
2 tsp oil
350g plain flour
4 tsp baking powder
pinch salt
pinch paprika
75g half fat spread eg anchor
115g (4oz) mozzarella light, grated
200ml skimmed milk
1 large egg
Lightly grease a 12 bun tin with oil. Grill the bacon
until crisp then cut into bite sized pieces. Saute the onion in the oil
until soft.
Preheat oven to Gas 5/190ºC/375ºF
Sieve flour, salt, paprika and baking powder into a
large bowl. Rub in the spread until it resembles fine breadcrumbs.
Stir in the bacon and onion and half the cheese. Beat the milk and egg
together and stir into the flour, mix roughly.
Spoon mixture into the tins and sprinkle with the reserved
cheese. Bake 20 mins until golden brown and risen.
