Broccoli and Cinnamon Soup

Broccoli and Cinnamon Soup

The delicate spicy taste of cinnamon gives this soup an unusual flavour.

Serves 4

Core recipe
Points per serving: ½ (original points)

1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, crushed
450g broccoli, roughly chopped
2tbsp soy sauce
1 litre vegetable stock
seasoning
2tsp cinnamon
cream to serve (optional and extra points)

Heat the oil in a pan, add the onion and garlic and sauté until transparent.

Add the broccoli, soya sauce, stock and seasoning and simmer for 45 minutes.

Allow to cool a little before liquidising until smooth.


Return to the pan, stir in the cinnamon and reheat gently, then serve
